Following an autoimmune diagnosis shortly after I had my daughter, Harper, I eliminated a seemingly endless list of foods in order to heal my body through nutrition and lifestyle and with as little conventional medical intervention as possible. I spent hours in the kitchen creating recipes for meals that would support my health while also appealing to the palette of toddler and my "gluten-forward" husband!
The idea for our nut blends originally came from my search for a grain and gluten-free granola that also met the rest of our high nutrition standards without sacrificing great taste: low sugar, 100% natural, non-GMO and free of dairy, soy, refined sweeteners and highly processed oils.
I couldn’t find anything that hit all the marks, so I decided to create it myself. This was the inception of our original flavor, Cardamom Coconut. It was an instant hit with friends and family – and then word quickly spread. We sold over 300 pounds baked in our sweet little two-rack home oven in just the first month!
At that moment, I realized I wasn’t alone in how I wanted to nourish myself and my loved ones. When I spoke with friends, we swapped stories about feeling tired of settling for foods that were “good enough for gluten/grain/dairy/sugar/insert your dietary restriction here-free.” We don't want “good enough.” We want just damn good.
This is when I decided to expand the flavor offerings and get creative with how else we could enjoy them. To think about using these nut blends as an ingredient to enhance our everyday meals, like a crunchy, plant-based protein for our salads or as the inspiration for something special, like the crust for a holiday pie.
