Umami Nut Blend
After receiving requests and feedback to produce a nut blend that is strictly savory, completely unsweetened, and free of cashews and pecans, we developed Umami just for you!
The flavor profile of this savory blend is deliciously salty, slightly peppery, and perfectly balanced with yummy umami flavor. What is umami, you may ask? It’s the "fifth taste” after the other four basic tastes: salty, sweet, sour, and bitter. It’s what makes food like asparagus, tomatoes, cheese, and meat so rich and tasty.
While porcini mushrooms deliver the umami experience to your taste buds, the flavor is nothing like mushrooms. Friends and family who love this nut blend have said it reminds them of “meatloaf,” “freshly baked homemade bread,” and “my favorite winter stew.” That’s the magic of umami!

This recipe took me almost six months to create! The idea came to me when I was on a fermented foods kick and I was playing around with different methods of fermenting several varieties of mushrooms, which led to a potentially embarrassing obsession with dried fermented mushrooms. After drying some fermented blue oysters, the end result tastes almost exactly like parmesan cheese! It didn’t taste like a mushroom at all. LIGHT BULB MOMENT. This inspired the quest to create a rich, earthy spice blend from scratch that would effortlessly elevate many of my favorite weekday staples, as well as my go-to cocktail party snacks, like goat cheese bruschetta, layered over my favorite pâté or coating a cheese ball on a charcuterie platter.
Umami has a more crumbly texture compared to our other nut blends by design, making it easy to generously sprinkle over stir-fries, roasted veggies, salads, or any of your favorite side dishes that could use a little jazz and protein punch (a whopping 7 grams per ounce to be exact)! We like to think of it as our "Everything Bagel" seasoning and a go-to dish topper.
